There is "evolvable" and then there is "evolving". It is possible -- IMVHO -- to set up molecules/systems that can be carefully "evolved" by developers without allowing them to "evolve" in ways out of our control. This is clearly not an either/or thing, but a grey-scale thing. The evolution would necessarily be out of control on a low level (evolving), but in control on a high level (evolved). If I remember correctly, Kelly talked about this some -- to make progress with systems like this, it has to be out of control to *some* extent. The basic "equation" is roughly: Less Control = Faster Progress + More Danger. Nothing new here of course, but the idea is significantly more important in this technology.
